Spicy Curry Chickpea Burgers

Ingredients
  1. 1½ cups cooked chickpeas
  2. ½ cup rolled oats
  3. ⅓ cup chick pea flour/plain flour
  4. 3-4 garlic cloves, minced
  5. 1 tsp cumin
  6. 1 tsp curry powder
  7. cayenne and ground black pepper (to taste)
  8. ½ tsp bicarbonate of soda
  9. 2 tbs lemon juice
  10. 1 tbs natural peanut butter
  11. 3-4 kale or spinach leaves (remove stems) finely chopped
  12. handful of pine nuts or sunflower seeds
  13. 2 tbs extra virgin olive oil / coconut oil (one for mixture and one for the skillet)
Instructions
  1. Take a large bowl. Put the chickpeas in a food processor and process until fully processed. Add chickpeas to the bowl.
  2. Add in the rest of the ingredients (except for 1 tbs of olive oil) and mix well.
  3. Lay out a cutting board and sprinkle a small amount of flour. Start forming patties with the chickpea mixture and lightly flour them.
  4. Heat 1 tbs olive oil on a nonstick skillet on medium-low heat. Once heated, add the patties and let cook for a few minutes. Flip them over and let the other side cook. Both sides should be a toasted brown color and slightly crispy.
  5. Remove from heat and serve.
