Rice Cooker Coconut Rice
Serves 2
  1. 2 cups rice
  2. 1 x 15 oz can full fat coconut milk
  3. cold water
  4. 1 tbsp coconut oil (not essential)
  5. 1-2 tbsp fresh ginger (minced)
  6. 1 tsp soy sauce
  1. Pour your rice into your rice cooker, and combine with enough coconut milk and water to make 2 1/3 cups liquid total.
  2. Stir in the coconut oil, ginger, and soy sauce , and turn on the rice cooker. When it clicks, it's ready to eat.
  3. Can be served alongside a main meal or topped with chopped fruit such as mango for dessert.
