Ingredients
  1. 275 grams self-raising flour
  2. 200 grams caster sugar
  3. 1 tsp baking powder
  4. 2 lemons - the zest and juice
  5. 100 ml vegetable oil
  6. 170 ml cold water
  7. 150 grams icing sugar
Instructions
  1. Put flour, baking powder, sugar and zest into a bowl and mix well before adding the oil, 3/4 of the lemon juice and the water.
  2. Mix thoroughly to make sure all is combined well.
  3. Pour into a lined cake tin and bake for 30 minutes until fully cooked at around 200 Celcius.
  4. When cool make a glaze for the top. Sieve the icing sugar and stir in the remainder of the lemon juice until the consistency is wet enough to pour over the cake.
