Chocolate Avocado Pudding
Serves 2
  1. 2 medium avocados
  2. 2 tbsp vegetable oil
  3. 1/3 cup agave or maple syrup
  4. 3 dates soaked in warm water for 15 minutes and chopped
  5. 1/2 cup cocoa powder
  6. 2 tsp vanilla extract
  7. 1/2 – 1 cup non-dairy milk
  1. Add ingredients to a blender or food processor in this order: oil, dates, agave, vanilla, half the non-dairy milk, avocados, cocoa powder.
  2. Blend for 2-3 minutes until smooth. Pour in additional non-dairy milk a little at a time until the pudding is the consistency you want. It will thicken after chilling in the refrigerator.
  3. Spoon the pudding into ramekins or bowls, cover and chill in the refrigerator until ready to serve.
