Chickpea and Garden Pea Salad

  1. 400g can chickpeas drained and rinsed
  2. 1/4 onion grated
  3. 1/2 lemon juiced
  4. 1 clove garlic crushed
  5. 1 tsp dried oregano
  6. 1/2 tsp salt
  7. 1/4 tsp ground black pepper
  8. 1/4 tsp cayenne
  9. 5 tbsp olive oil
  10. 100g (4oz) frozen garden peas thawed
  1. In a bowl combine the chickpeas, onion, lemon juice, garlic, oregano, salt, black pepper and cayenne pepper.
  2. Stir in the olive oil and adjust the seasoning to taste.
  3. Mix in the garden peas. Cover and leave to marinate in the refrigerator for at least one hour.
