  1. 1 can black beans or kidney beans, drained and rinsed
  2. 1/2 cup diced orange bell pepper
  3. 3/4 cup diced fresh tomato
  4. 1/2 cup sweetcorn
  5. 1/3 cup diced cucumber
  6. 3 green onions, sliced thin
  7. 1 jalapeno, deseeded and minced
  8. the juice of 1 lime
  9. 1/2 teaspoon canola or grapeseed oil
  10. 1 tsp cumin
  11. 1 tsp coriander
  12. salt and pepper to taste
  1. Combine the beans, bell pepper, tomato, corn, cucumber, green onion and jalapeno in a medium bowl. Stir until ingredients are well distributed.
  2. In another bowl, combine the lime juice, oil, cumin, coriander, salt and pepper. Pour over the bean mixture, tossing to combine. Chill until serving time.
  1. You can also use a can of chopped tomatoes, drained
