Avocado Chickpea Salad

  1. 400g tin chickpeas drained
  2. 1 avocado
  3. juice of half a lime
  4. 3 tbsp fresh coriander chopped
  5. 2 spring onions sliced
  6. salt and black pepper
  7. To serve
  8. pitta bread
  9. sliced tomato
  1. Coarsely mash the drained chickpeas and the avocado together with a fork or potato masher.
  2. Add the lime juice, coriander and sliced spring onions. Mix well and season to taste.
