Vegan Pancake Spinach Rice

Greek Style Spinach and Rice (Spanakorizo)

Ingredients
  1. 2 1/4 lbs pounds of fresh spinach chopped, washed, drained
  2. 1 spring onion chopped
  3. 1/3 cup olive oil
  4. 1 1/3 cup water
  5. 1 1/3 cup long-grain rice
  6. 5 1/4 cups water
  7. sea salt
  8. freshly ground pepper
  9. juice of 1 lemon (about 2 tablespoons)
Instructions
  1. In a stock pot, sauté the chopped spring onion in the oil over medium heat for 8-10 minutes.
  2. Add spinach and 1 1/3 cups of water and cook until the spinach wilts, about 5-7 minutes.
  3. Add rice and 5 1/4 cups of water, bring to a boil, and cook for 15 minutes, stirring occasionally.
  4. Stir in lemon juice and salt, cook for another 5 minutes and remove from heat. Stir, cover, and let sit for around 20 minutes.
  5. Serve with wedges of lemon and freshly ground pepper.
